Peeling and deveining shrimp:

There are two visible “veins” in pacific white shrimp. One is not a true vein, it’s the shrimp’s digestive tract and runs along the top of the shrimp. This is the one you want to remove. The other is blue and is an actual vein and it runs along the bottom of the shrimp.

Boiling shrimp:

  • fresh shrimp
  • tablespoon of salt

Bring a pot of water (about 4 cups/lb of shrimp) to boil. Add the shrimp. Shrimp will turn pink/orange all over in about 1-1.5 minutes. Remove and immediately place on ice.
